Favourite Burger

I have been on a little mission over the past couple years to find the best burger place in Sydney. As a general statement, Australians are terrible when it comes to burgers. For your average Australian when it comes to burgers, bigger=better. Not true, a burger should be delicate made with only a few ingredients. But each component must be balanced and arranged in the perfect manner. Your mouth should glide through the bun - and with lettuce there should be a crunch. The cheese should be smoked and dripping down your burger. I have scoured the earth, far and wide. Hustled my through grungy alley ways - searching for that perfect bun to meat ratio, patty, bun & cheese. Mary's has been my number 1 for a while. It's a beautiful burger, but I've known for a while - that there must be better. Saturday night I came across a neat little pub in Ultimo, near Glebe. I was sent to heaven. The cheese oozed down my patty onto my hands. The bun, light and fluffy like a cloud of ecstasy - with the perfect thickness of glaze over the top. The patty, lean yet juicy - explodes with seasony goodness with every bite. The pure beefiness of this patty is overwhelmingly orgasmic. And the gherkin. OMFG the gherkinssssss. I used to be an atheist, now I am devout to Publife. 8=====D~~~~~~~~~ Publife. I want to find the best burger in Australia and would love to hear from you guys - where do you get your favourite burger from?

    I disagree on what makes a good burger and that it should only include a few ingredients - personally I prefer a simple burger, that is tasty and satisfyingly filling - but if they've created something using a lot of ingredients I won't hold that against them. I'm not a fan of most melted cheese on burgers, I found that makes it feel 'thick, gluggy and like your mouth is coated in thick lard'. If a piece of swiss/tasty or similar is placed on top of the patty as the burger is being constructed, that gets a nice amount of heat into the cheese - but not so much that it melts. I'll be following the thread with interest, I haven't had any exciting ones in Sydney, my current favourite is "The Black Dog" made by the Black Dog Cafe/Taverna in Beroun, a walled town just outside Prague. Glazed buns from the bakery 20 feet from it's old caravan in the park location, patties prepared fresh on-site using meat from a local abattoir, and being in Czech it also cost next to nothing, only a few dollars.

    In Soquel California,I found the perfect burger..It had a schwart brod bun...it was sensational...and there was an awesome bagelry in the same town...garlic studded,with cream cheese,chives and lox was my choice xxFreya

    at Wellington railway station (also Shortland St, Auckland). Best burgers at around 2-3am on the way home after being clubbing and 9/8 pissed. Just hits the spot. (Not done that for awhile though). As for normal times I have not found one yet, still looking.

    Alfred's in Guilford has been around since 1946 and they serve 40 different types of burgers. Maybe a trip in October for the big meet and greet being held.

    Pulled pork with apple sauce burger. New local kiwi shop up my way.the best. But when I lived in sydney and worked at Erskineville, there was a retro burger place next door, and man they were amazing.best Ive ever had. That was a good 15 yrs ago now. Probably long gone.

    Last summer we started doing a hamburger test, each Sunday we would jump on the bike and try a hamburger at a different pub around Brisbane. Unfortunately our favourite hamburger was too close to home so the riding was limited. Fortunately it's a main stream pub so they don't have any decent beers. So our quest continues.

    on the new low carb thin bun, died and gone to heaven, get the same one every time but I need to steal some of your love and passion to use in my next sexy exchange. Ersk pub (newly reno'd) and there's a tiny little bar near the station (I don't ever go there anymore, the owner is dick) - that has decent burgers.

    Andrews hamburgers in Albert Park Not my style. The bun looks dry, and the burger has been made with the "bigger=better" ideology. Would be good if I was really stoned. FergburgerLooks good! I will seek this one out next time I'm in QLD. Or if I go to NZ for some reason. Alfred's in Guilford Bun looks dry, still looks delicious.     Syd. I don't think I have ever had a burger in Czech all the times I have been there! I can't go past the kransky hot dogs.... American Style. Yummo.

    morganaschild - I'd say we do a different burger to the states - I enjoy a good fish'n'chip shop burger, they don't really do that, not with pineapple or beetroot. (IMO we do better pizza, American style pizza is awful, I'm not crazy on actual Italian pizza either - but they always have killer dessert crepes) Meeka - they probably do American style, the guy that owns/runs Black Dog is a young US guy. I wish Holsteins was here also, between Holsteins, Marquee and Wicked Spoon I could happily live at Cosmopolitan in Vegas. I've never had Fergburger, but I know plenty of Kiwis who swear by them, I enjoyed the Curly Burger at Curly Bar/Kings Country Brewing Company on the road to Waitomo caves. It has really tender steak as well as a beef patty.

The idea of a lime mayonnaise sounds much nicer to me than a garlic aioli, I imagine the lime makes it feel lighter - the garlic just a stinky reminder for hours after you've finished the meal. OG Burger minus cheese, tomato and aioli looks tasty and like it'd leave a 'cleaner' mouth feel. I do look forward to trying it - though I'll split it and try "stock" and customised.

Solution: Get the cheese burger without the cheese From my knowledge garlic aioli is made with a citrus acid. Lemon, lime or a white vinegar to cut through the glugginess. Depends on the maker just how 'fresh' it tastes. The garlic is roasted before added to the sauce, this makes the garlic taste short and sweet whilst balancing out any overpowering cheese aftertastes. This is a trick you can use when making gorgonzola sauce. You sound just like Luke Powell. Don't suppose you're a fan of japanese food? Either way - his the guy who designed the mary's burger.     Are not in Sydney, they're at my place. Can also vouch for Alfred's in Guldford, they just know what they're doing in there, it doesn't matter what you order it'll make any foodie juicy, and a lentil burger that's so tasty you don't miss the meat? Chef's hat's off to that!

Burgers I'm trying this week: Mister Gees (beef & cheese burger)Rosie Campbell's (Jamaican chicken burger) haha I am quite a fan of Japanese food - I'm going to get in to Newtown soon to try this Marys burger, maybe tomorrow - I don't have a beard, waxed moustache, skinny jeans, glasses without lenses or a fixed pushbike with a basket and bell... will I even make it past the dress code? From the pictures it looks hipster-as-hell. Any cheesecake fans? I had the opportunity to try The Pie Tin's (also in Newtown) peanut butter cheesecake, and the cookies and cream - incredibly rich but so incredibly more-ish you will eat the whole piece even if you feel thick as hell afterwards. Rosie Campbell's sounds great - unlike other areas of my life, in this aspect I do quite like my meat to be dry-rubbed, and jamaican jerk cooking is usually great. Freya: it's not just what is in the middle, I appreciate quality buns that complements the meat between them.
